Sambal Oelek
Sambal Oelek, or as I’ve heard it described on cooking shows, Thai ketchup, is basically Sriracha sauce, without the garlic, For my pantry essentials I favour this more traditional style of Sambal, but simply add 1 cup of garlic to the ingredients below and viola, Sriracha.

Ingredients
- 2 lb red fresh jalapeños, stemmed and chopped very roughly
- 10 fresh Thai chilies,
- 1⁄4 cup olive oil
- 2 cups rice wine vinegar
- 1 tsp coconut sugar
- 2 teaspoons salt
Directions
- In a medium sauce pan over low heat, combine the jalapeños, Thai chilies, and oil and cook until the ingredients soften, about 15 minutes.
- Add the vinegar and cook until reduced by half, 12 to 15 minutes.
- Remove from the heat and add the sugar and salt. Allow to ool to room temperature. Transfer the mixture to a food processor and pulse 3 or 4 times. Don't blend it into a fine paste, unless of course you would prefer it that way. Mixture should be chunky, like salsa.
- Store in the refrigerator in a tightly sealed jar.
