  • 2 lb red fresh jalapeños, stemmed and chopped very roughly
  • 10 fresh Thai chilies,
  • 1⁄4 cup olive oil
  • 2 cups rice wine vinegar
  • 1 tsp coconut sugar
  • 2 teaspoons salt
  1. In a medium sauce pan over low heat, combine the jalapeños, Thai chilies, and oil and cook until the ingredients soften, about 15 minutes.
  2. Add the vinegar and cook until reduced by half, 12 to 15 minutes.
  3. Remove from the heat and add the sugar and salt. Allow to ool to room temperature. Transfer the mixture to a food processor and pulse 3 or 4 times. Don't blend it into a fine paste, unless of course you would prefer it that way. Mixture should be chunky, like salsa.
  4. Store in the refrigerator in a tightly sealed jar.
