Sambal Oelek

IMG_20141115_112832_editSambal Oelek, or as I’ve heard it described on cooking shows, Thai ketchup, is basically Sriracha sauce, without the garlic, For my pantry essentials I favour this more traditional style of Sambal, but simply add 1 cup of garlic to the ingredients below and viola, Sriracha.

Ingredients
  • 2 lb red fresh jalapeños, stemmed and chopped very roughly
  • 10 fresh Thai chilies,
  • 1⁄4 cup olive oil
  • 2 cups rice wine vinegar
  • 1 tsp coconut sugar
  • 2 teaspoons salt
Directions
  1. In a medium sauce pan over low heat, combine the jalapeños, Thai chilies, and oil and cook until the ingredients soften, about 15 minutes.
  2. Add the vinegar and cook until reduced by half, 12 to 15 minutes.
  3. Remove from the heat and add the sugar and salt. Allow to ool to room temperature. Transfer the mixture to a food processor and pulse 3 or 4 times. Don't blend it into a fine paste, unless of course you would prefer it that way. Mixture should be chunky, like salsa.
  4. Store in the refrigerator in a tightly sealed jar.
