This rich and delicious pumpkin soup is spiced with breakfast blend spice mix.

Ingredients
  • 1 Blue Lakota pumpkin, seeded, peeled and diced.
  • 1 large sweet potato, peeled and chopped
  • 1 large onion, chopped
  • 1 jalapeño pepper, seeded and chopped
  • 1 large leek, chopped
  • 4 cups homemade chicken stock
  • 1 cup heavy cream (optional)
  • 1 tip. salt
  • 1 tbsp. breakfast blend spice mix
  • 1 tbsp. Coconut oil
Directions
  1. In a Dutch oven, melt coconut oil over medium heat. Add onions, leeks and jalapeño pepper and cook until tender, about 5-8 minutes.
  2. Stir in pumpkin and sweet potato.
  3. Stir in chicken stock and bring to gentle boil. Cook for 20-30 minutes or until pumpkin is soften.
  4. Stir in spice mix and salt.
  5. With an immersion blender, purée. Return to simmer for 10 minutes.
  6. Stir in heavy cream.
  7. Serve
